
It Is Strawberry Season - Recipes to Enjoy This Favorite Berry!
One of the best things about Spring is the beautiful and delicious strawberries that show up in the Farmer's Markets and Produce Departments of our grocery stores. Try these recipes to help you get the most from these wonderful berries. Strawberries with Fluffy Citrus Dip is a great way to enjoy the fresh berries. The Strawberry Sauce recipe below is perfect for a light dessert when served over angel food or pound cake. It is also a wonderful sauce for your weekend breakfast or brunch when served over waffles. I have added a lemon-flavored cheesecake to this strawberry selection as the berries atop this cake are what really makes it pop in color, presentation and flavor. Enjoy berry season!
STRAWBERRIES WITH A CREAMY CITRUS DIP 1 pkg (8-oz) cream cheese, softened 2 cups powdered sugar 1 tsp vanilla extract 1 tsp almond extract** 1 tbsp grated lemon rind* 1 cup whipped cream fresh whole strawberries, wash thoroughly
Using an electric mixer at medium speed, beat the cream cheese, powdered sugar, vanilla extract, and lemon rind together until fluffy. Fold in the whipped cream. Serve with the fresh berries for dipping.
Variation: *Use lime or orange zest if desired. **Another teaspoon of vanilla may be substituted
STRAWBERRY SAUCE 1 cup whole fresh or thawed frozen strawberries 1/3 cup no-sugar-added apple juice 1 cup sliced fresh or thawed frozen strawberries 1/2 cup low-fat plain yogurt
Put the whole strawberries and apple juice in blender container and puree. Pour mixture into a bowl. Stir in the sliced strawberries and gently fold in the yogurt. Serve over waffles, angel food or pound cake.
Yield: 2 cups
BERRY TOPPED LEMON FLAVORED CHEESECAKE 1 1/4 cups graham cracker crumbs 1/4 cup sugar 1/3 cup butter, melted
Preheat oven to 300 degrees.
Combine the graham cracker crumbs, sugar, and melted butter well. Press the mixture firmly onto the bottom of a 9-inch springform pan; set aside.
2 pkgs (8-oz each) low-fat cream cheese, softened 1 can (14-oz) sweetened condensed milk 3 eggs 1/4 cup ReaLemon Lemon Juice from Concentrate 1 carton (8-oz) sour cream, room temperature Fresh strawberries or blueberries
In a large mixer bowl, beat the cream cheese until fluffy. Gradually beat in the sweetened condensed milk until mixture is smooth. Add the eggs and lemon juice; mix well. Pour into the prepared springform pan.
Bake at 300 degrees for 50 to 55 minutes or until the center is set; top with sour cream. Bake 5 minutes longer. Remove from oven. Allow to cool and then chill until serving time. Top with the berries in a decorative pattern or piled in the center.
Be sure to refrigerate any leftovers!
